Bake Potato Soup

4 large baking potatoes
1 stick of butter
1 cup of sour cream...
3 cups of milk
1 package of bacon crumbles
1 cup of shredded cheese
salt and pepper to taste
crackers for serving with

Need 4 large bakers scrubbed and diced up in 1 inch cubes. You can leave the skin on or off but if you decide to remove, peal before microwaving. Place in Bean Pot and microwave for 10 minutes. Remove from microwave and add 1 stick of butter and begin mashing up the potatoes but not until totally smooth, this gives a nice texture to your soup. Next add 1 cup of sour cream and 3 cups of milk, 1 package of bacon crumbles, and 1 cup of shredded cheese. Salt and pepper to your family’s liking. Stir together place lid on and microwave for another 8 minutes (depending on microwave you may need to give another minute or two). Remove, stir and serve with additional topping of sour cream, shredded cheese. Serve with your favorite crackers and a salad. Enjoy!!

Chocolate Chip Bean Pot Cookie




One dish & wooden spoon…Simple & Easy 


Ingredients:
2 ¼ cups flour
1 tsp. baking soda
1 tsp. salt
1 cup butter, melted
¾ cup granulated sugar
¾ cup brown sugar, packed
1 tsp. vanilla extract
2 large eggs
12 oz package semi-sweet chocolate chips

Directions:
In your Celebrating Home Bean Pot, add all ingredients (except chocolate chips) & stir.
Pour in chocolate chips and stir again.
Spread evenly across the bottom.
Bake, uncovered, at 400 degrees for 28 minutes. Turn down to 325 degrees then bake another 28 minutes.
Don’t preheat oven.
Best with an Oval Bean Pot.
Cookie is done when the batter no longer moves and the cookie test done with a toothpick.
Cut into pie shaped pieces to serve. It is so good served warm.

Cherry Dump Cake


1 box of spice cake
1 can of cherry pie filling
1 stick of unsalted butter

Pour the cherry filling in the bottom of your bean pot.  Place the DRY cake mix on top of the filling.  Cut up the stick of butter and place on top covering the top.  Bake 375 for 1 hour with the lid off.

Chicken Taco Soup

2 cans of chunk chicken breast
1 can each of black beans
kidney beans
corn
Ro-Tel tomatoes
1 pkg dry taco seasoning mix
1 pkg dry ranch dressing mix
1 or 2 cans Fat Free Chicken Broth (amount varies based on your preference). If you like a thicker soup, use less broth. If you like a thinner soup, use more broth.


Mix all together in the bean pot. Replace lid. Microwave for 15 minutes. Serve with shredded cheddar cheese, sour cream, taco chips.

Chocolate Chip Dip

1-8ounce cream cheese
1/2 cup butter
1cup confection sugar...
2 tb spoon brown sugar
1 teaspoon vanilla extract
1 cup chocolate chips
Mix(cream) together butter and cream cheese ( you can mix right inside beanpot) add in all other ingredients and chill for 30 mins. Serve with gram crackers! You can also add mini m&ms or your other favorite candies too!



Serve in Bean Pot, Mini Bean Pots or Cool Dip

Cherry Cheese Pastry

Cherry Cheese Pastry
Preheat oven to 350.
While its heating up you can grab your platter (this one is Venetian Spice) and pat down 4 triangles of croissant dough, smoothing out seams.
Next with a mixer whip together 1 8 oz pakage of cream cheese, 1 egg yolk, 1/3 cp powdered sugar and 1tsp of vanilla.
Once this is blended almost smooth spread on top of dough.
Next spoon in one can of cherry pie filling on top of cream cheese mixture.
Then with the remaining triangles of dough flatten out and crisscross over the cherry pie filling.
Gently press the edges together and placed in the oven for 30 minutes.
While its baking make a simple powdered sugar glaze:
1 cup of powdered sugar, 2 tsp of softened butter and dash of salt and 1/2 tsp of vanilla.
Mix together till smooth.
When you remove pastry from oven drizzle with glaze and its ready to serve.

Potato Casserole

Preheat oven to 400 degrees:

8 to 10 diced potatoes
Place in a 9 x 13 Celebrating Home Casserole Dish

Mix together:
2 cups milk
2 cups cream
1/4 cup flour
Salt
Pepper

Pour over potatoes.
Cover with foil.
Bake 45 minutes

Remove foil and sprinkle shredded mozzarella cheese over potatoes.
Return to oven uncovered for 10 minutes.

Optional:
1 bottle Hormel real bacon bits

Cheesesteak Sloppy Joes


Ingredients:
1 tablespoon extra virgin olive oil
1lb ground beef
1 medium onion (chopped) or 1/2 cup of frozen already chopped

1 medium green bell pepper (seeded and chopped) or 1/2 cup frozen chopped
¼ cup steak sauce
1 cup beef broth
salt and ground black pepper (to taste)
1 pkg of Shredded Mozarella Cheese or sliced Provolne
4 hamburger buns ( for the class I am going to use the small rolls you can buy in the bakery like potato rolls.
In your bean pot, put olive oil (vegetable will work as well) bell peppers, onions and hamburger. Put the lid on and microwave for 5 minutes. Remove and crumble. Repeat until hamburger is slightly pink, mostly brown. add beef broth and steak sauce and heat for another 4 minutes. Remove lid and serve on rolls sprinkle a good amount of cheese and then top with the rest of the roll. Serve and enjoy!

Bean Pot Chicken Spaghetti

Ingredients:
1 pound of cooked, chopped or shredded chicken (I use pre-cooked, fajita seasoned)
1 box of Ronzoni angel hair pasta
1/2 pound Velvetta, diced...
1 can cream of chicken
1 can of petite diced tomatoes with green chilis
Diced green and red bell pepper (1/3 to 1/2 of each)
Chopped onion (1/2 of a large onion)
Black pepper, garlic salt, parsley, basil to taste

Break pasta in half and put into bean pot. Add enough water to cover. Put lid on bean pot and microwave for 5 minutes. Chop and dice veggies and Velveeta while pasta cooks. Let the pasta sit while prepping veggies and Velveeta. Stir noodles, then drain. Add Velveeta to the pot and stir followed by all other ingredients. Stir again. Put into microwave and cook for 5 minutes. Remove and stir. Cook for an additional 3 minutes. Stir and serve. Can top with shredded cheese.

Unstuffed Cabbage

1 1/2 to 2 pounds lean ground beef or turkey
1 tablespoon oil
1 large onion, chopped...
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

Preparation:

Put olive oil, ground beef and onion in bean pot and microwave 3 minutes. Chop up ground beef and microwave another 3 minutes. Drain, then add other ingredients. Microwave for 15 minutes or until cabbage is tender.

Best Ever BEAN POT Enchilada's!!

1 Bag of Frito’s
2 Cans of Chicken Breasts
2 Cups Of Grated Mexican Style Cheese
1 Small Can of Chiles...
1 Large Can of Enchilada Sauce
Olives (Optional)

 Layer up all ingredients twice in Bean Pot….Place in Microwave for 15-20 minutes.
Serve with Sour Cream and Salsa

Spice Pumpkin Cake

Spice cake mix
1 can of pumpkin

Mix in the large bowl ~ cover ~ microwave 10 minutes

Healthy Banana Bread

Banana Bread with honey and applesauce instead of sugar & oil....Delicious & Healthy... YES PLEASE!!

Ingredients
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar free applesauce
3/4 cup honey
2 eggs, beaten
3 mashed overripe bananas
Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Meatloaf

1lb hamburger
1 box stuffing
1 egg
cup water.

Mix in a bowl (we added green peppers) and pat down in your CH dish or Bean Pot. Cook at 350 for 45mins.

Corned Beef and Cabbage Soup

 Ingredients:

2 tsp olive oil
2 leeks, chopped (whites and light green only)
2 cloves garlic
3 medium carrots, chopped
1 yellow pepper, chopped
1 lb lean corned beef brisket (yields 9 oz cooked)
6 cups of water
2 bay leaves
1/4 cup chopped parsley, plus more for garnish
1 small head cabbage, cored and chopped
1 large potato, peeled and cubed
fresh pepper to taste


Directions:
In your beanpot, heat oil and Add leeks and sauté until soft, about 4-5 minutes in the microwave. add garlic, carrots and yellow pepper in the microwave for about 2-3 minutes.
Add corned beef, peppercorns or seasoning packet that comes with the corned beef, bay leaves, parsley and water; cover and bring to a boil. Cook in the oven covered on low heat for 3 hours, until the meat becomes tender.

Remove the corned beef, set it on a cutting board and shred with a fork. Return it to the pot then add the cabbage and potatoes, taste for salt and pepper and adjust as needed. Cook until the potatoes and cabbage are tender, about 45 more minutes.

Makes 9 cups.
 

Rotel Chicken Mexican Casserole

3 split fryer breasts cooked and cubed
1 bag of tortilla chips crushed
1 can of Rotel
1 can Cream of Chicken soup
1 small can of chopped green chiles
1 lb of Velvetta or American Cheese

Directions:
Cook and dice your chicken. Mix together your Rotel, Soup, Green Chiles, and cubed Cheese. Heat this mixture in a microwave till melted and then add your chicken. In a Celebrating Home casserole dish, layer 1/2 your chips and 1/2 your cheese mixture. Repeat these layers and top with a few crushed chips. Bake at 350degrees until hot and bubbly. Its DELICIOUS!!!!

Bean Pot Dutch Apple Pancake

At 350* heat 2 cans apple pie filling, 2Tbs Butter & 1 tsp cinnamon for 5 minutes.
Meanwhile in a bowl, beat 2 eggs, add 1/2 C. milk, 1/2 C. flour, 1 Tbs sour cream, 1/4 tsp salt. Beat until smooth & pour over apple mixture.
Bake 20 to 30 min. or until golden brown.
Dust with powdered sugar or cinnamon & sugar mixture.
Great for breakfast or brunch or serve as a great desert.

EGG CASSEROLE

12 large eggs
1/4 cup shredded cheddar cheese
1/4 cup milk

6-8 slices of cooked bacon or crumbled sausage
salt/pepper to taste

Put it all the in beanpot and scramble. Place lid on beanpot and microwave on high for 4 minutes. Take out of microwave and re-scramble. Replace in microwave and cook on high for 5-6 minutes on high! Enjoy! You’ll never oven bake an egg casserole again!

Buffalo Chicken Crescent Loaf


  • Buffalo Chicken Crescent Loaf


    Ingredients!

  • 8 ounces cream cheese, softened
  • 1 packet ranch dressing mix
  • 1/2 cup celery, finely diced
  • 1/2 cup onions, finely diced
  • 1/2 cup Buffalo sauce
  • 2 (6 ounce) packets cooked chicken, very finely diced
  • 2 tubes crescent rolls
  • 1/2 cup ranch dressing (for dipping), optional

Directions!

  1. 1Preheat oven to 375 degrees. In a large bowl, combine cream cheese, ranch dressing mix, celery, onions, Buffalo sauce, and chicken.
  2. 2Open the tubes of crescent rolls and separate each roll into four rectangles. Lay the rectangles on a Celebrating Home Hospitality Tray.
  3. 3Spoon chicken mixture into the center of the crescent dough ring. Fold the top of each crescent dough rectangle over the chicken filling, pressing into place to secure the dough all the way around the filling.
  4. 4Bake in preheated oven at 375 degrees for 30 minutes, or until golden brown. Allow to cool slightly before serving. Garnish with chopped scallions, cilantro, or other herbs, if desired.  Serve with Ranch.



Strawberry Lemon Bundt Cake

Lemon cake mix
Strawberry soda

Mix in Celebrating Home serving bowl.  Pour into Celebrating Home bundt pan and cover with Celebrating Home plate.  Cook for 8 minutes in microwave! Flip out on cake plate. Microwave pink lemonade icing (available at Wal-mart) for 40 seconds then drizzle over cake! Yummy!
