Touchdown Taco Dip


Ingredients:
* 2 cans refried beans (16 oz)
* 1 brick cream cheese (softened)
* 2 cups sour cream
* 4 Tbsp taco seasoning mix
* 1/4 cup finely minced garlic
* 1/2 cup cheddar cheese
* Tortilla Chips, Fritos, or Veggies

TOPPING:
* 1 cup diced black olives
* 1 medium tomato
* 1/4 cup sliced green onions
* 2 Tbsp. fresh cilantro
* (I cheat & add 2 cans drained Rotel & top with black olives for the topping)

Directions:
* Spread refried beans into your Magic Bean Pot or Small Serving Bowl.
* In mixing bowl - Beat cream cheese, sour cream, taco seasoning mix, garlic, & cheese.
* Spread over refried beans.
* Bake at 350 degrees for 18 to 20 minutes.
* Add toppings after baked & serve with chips.

7up Chicken and Rice


3 lbs. chicken breast (boneless and skinless)
10 ½ oz. can of cream of chicken soup
1 (12oz) can of 7 Up
1 Cup minute rice
¼ cup chicken broth


Place chicken breast in Bean Pot with soup and 7 Up. Cover and bake at 350° for 2 hours. Add rice and chicken broth and bake one more hour.
Microwave adaptation: Microwave chicken and 7-Up 20 minutes. Stir and add 1 cup minute rice and 1/4 cup chicken broth (OR I used more 7up!) and microwave another 15mins and VOILA!
Super easy prep dinner is served in less than 40 minutes!!

Three Envelope chicken



4 to 5 chicken breast (cun cut in strips)
1 envelope of Zesty Italian dressing
1 envelope of Ranch Dressing (not dip)

1 envelope of Chicken Gravy
2 cups water
Put chicken on bottom of Bean Pot. Mix water with 3 envelopes and pour over chicken. Cook @ 325* for 2 hours. serve over rice. Mixture will be watery so be careful when spooning over rice.

Bean Pot Buttermilk Cornbread

1 ½ cups corn meal
½ cup all-purpose flour
1 ½ cups buttermilk
¼ cup Vegetable oil
2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
½ teaspoon baking soda
2 eggs

Directions:
Mix together in Bean Pot. Place in 350 degree oven for 30 minutes

Mini Peach Cobblers

Peal and slice 3 peaches and mix in 1/3 cup sugar, 2 tbl of brown sugar, 1 tsp of flour and 1 tsp of cinnamon.
Mix together a...nd pour into 2 mini casseroles.
Set aside.
Mix together 1/2 cup of a biscuit type mix with 1 tbl of brown sugar and 1/2 tsp of cinnamon then add 2 tbl of softened butter.
Mix together till crumbly and sprinkle on top of peaches.
Place lids on and bake on a cooke sheet for 25 minutes at 385 degrees, then remove lids and brown crust until golden.
Remove from oven and serve with a scoop of vanilla ice cream.

Caramel Crunch Cake

Mix a devils food cake in BP with 1 can of Coke
Bake in microwave in high for 13 minutes in Celebrating Home Serving Bowls
Take out and poke holes in cake with fork
Pour 1 can of sweetened condensed milk and 1/2 cup caramel ice cream topping over cake
Top with crushed Butterfingers (5 Fun Size)
Serve with Cool Whip

Fire Cracker Casserole

 Ingredients:
1 lb of hamburger
1 taco seasoning mix
1 can of cream of mushroom soup or cream of celery soup
1 can drained black beans
1 can of rotel
1 can of corn drained
1 bag of tortillas chips
1 cup of shredded cheddar cheese

Garnish:
Chopped tomato, chopped lettuce and sour cream.

Brown hamburger meat and drain off excess grease. Add taco seasoning mix and blend well. Add rotel, black beans, corn and soup + ½ can of water. Mix ingredients till well blended. Place a layer of corn chips in the bottom of the bean pot. Layer with meat mixture, and layer with cheese. Repeat the process until you end up with just the meat mixture and top with cheese. Put the lid on bean pot and cook in microwave for 20 minutes. Remove from microwave and let set for about 5 minutes. Serve with additional chips, lettuce and tomatoes and top with sour cream. This can also be an appetizer.

Bean Pot Hot Apple Crisp


 1 box apple cinnamon muffin mix
1/2 Cup brown sugar
1 Stick butter
1/2 Cup oatmeal
Fresh apple slice

Mix all ingredients together in Bean Pot.
Bake at 350 for 50 minutes,
Extra oatmeal and brown sugar can be added to make recipe go farther.
Apple pie filling can be substituted for fresh apples.

Soft Caramel Bean Pot Popcorn

1/3 cup popcorn kernels
3 tablespoons cooking oil

Add cooking oil to popcorn kernels, then cover bean pot with lid. Microwave for 5-6 minutes. Remove lid carefully to avoid escaping steam.

Caramel Topping :
1/2c brown sugar
1/2 stick butter
1/2c karo syrup
1/2 can condensed milk
Heat until mixed, then pour over

Bean Pot Dutch Apple Pancake


 In your favorite bean pot: at 350*- heat 2 cans apple pie filling, 2Tbs Butter & 1 tsp cinnamon for 5 min.

Meanwhile in a bowl, beat 2 eggs, add 1/2 C. milk, 1/2 C. flour, 1 Tbs sour cream, 1/4 tsp salt. Beat until smooth & pour over apple mixture.

Bake 20 to 30 min. or until golden brown. Dust with powdered sugar or cinnamon & sugar mixture.
Great for breakfast or brunch or serve as a great desert.

Chocolate Lasagna!!!

 
Not for the Bean Pot but hey....we do have other stoneware.  Check this lasagna out which can be made by using our 9x13 casserole dish.
1 package regular Oreo cookies – about 36 cookies
6 Tablespoon butter, melted
1- 8 ounce package cream cheese, softened
1/4 cup granulated sugar
... 2 Tablespoons cold milk
1- 12 ounce tub Cool Whip, divided
2 – 3.9 ounce packages Chocolate Instant Pudding.
3 1/4 cups cold milk
1 and 1/2 cups mini chocolate chips

1. Begin by crushing 36 Oreo cookies. (use my food processor)

2. Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.

3. Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust.

4. In a bowl, combine chocolate instant pudding with 3 and 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.

5. Spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.
