Salsa Fried Potatoes

1 cup salsa
1 small can of black olives
2 cloves pressed garlic
1/4 cup fresh cilantro -chopped
4 - 5 potatoes - sliced
1 bag taco blend cheese
 
Mix salsa, black olives and garlic together and add cilantro. Place the potatoes in the Bean Pot, add salsa mixture and cover.  Bake at 350 for 30 minutes. Remove lid & sprinkle desired amount of cheese over potatoes. Bake another 10 minutes until the potatoes are fork tender & cheese is melted.

Baked Beans

3 cans (15 oz. each) pinto beans, drained, rinsed
1 cup KRAFT Original Barbecue Sauce
1 small onion, chopped
1/4 cup firmly packed light brown sugar
2 slices OSCAR MAYER Bacon, chopped
Place all ingredients in your bean pot and mix well.  Cover with lid and cook at 200 for 4 - 6 hours
(or @ 300 for 3 hours).

Super Easy Baked Ham

Place ham in Bean Pot and cover with lid. Place in oven at 350 for 2 - 3 hours. If desired, glaze ham in last 30 minutes of cooking with room temperature pineapple and brown sugar glaze.

50-Yard Line Hot Dog Fondue

3/4 cup CHEEZ WHIZ Cheese Dip
1-1/2 tsp. milk
1/2 tsp. chili powder
1 pkg. (1 lb.) Beef Franks
24 small pretzel sticks

Mix your CHEEZ WHIZ, milk and chili powder in bean pot. Cook in microwave for 2 minutes at a time until heated through, stirring at each check.  Cut each frank into 4 bite-sized pieces. Heat franks as directed on package. Insert 1 pretzel stick into each frank piece.  Enjoy dipping franks into CHEEZ WHIZ mixture.

Slow Cooked Candied Sweet Potatoes

4 to 5 large sweet potatoes, peeled and cut in 1-inch cubes, about 8 to 10 cups
1 cup light brown sugar, packed
Juice and finely grated zest of 1 orange
1/4 cup honey
4 tablespoons butter
1/2 teaspoon vanilla
1 1/2 teaspoons cinnamon
Dash nutmeg

Arrange sweet potato cubes in the pot.  Combine the remaining ingredients and heat in the microwave. Stir to blend and pour mixture over the sweet potato cubes.
Cover and cook at 200 for 6 to 8 hours or until potatoes are tender.
Serves 6 to 8.

Apple Sauce

5 lbs peeled/cored/sliced apples
3 tsp honey
1 tsp lemon juice
1 tsp cinnamon/nutmeg (to taste)

Mix all ingredients together in your bean pot.  Cover and bake at 250 all day or overnight.  Serve with dinner or as a topping on waffles or ice cream.

Bean Pot Stuffing

1 tablespoon margarine
7 cups bread cubes
1 cup onion, chopped
1 cup celery, chopped
3 cups apple, chopped
1/4 cup fresh parsley, minced
1 teaspoon salt
1/4 teaspoon paprika
1/2 teaspoon rubbed sage
1/2 teaspoon dried thyme
1 1/4 cup chicken broth
Since we are putting a large amount of bread in the bean pot to prevent it from sticking you will need to grease your bean pot with margarine. Combine ingredients and fill Bean Pot. Cover and cook on high for one hour, stir well; continue to cook on low for 3 hours.

Bean Pot Butterscotch Dip

4 Cups of Butterscotch Chips
2/3 Cup Evaporated Milk
2/3 Cup Walnuts, toasted and finely chopped
2 tsp. Rum Extract
Apple and Pear Wedges for dipping!

Mix butterscotch chips and milk in Bean Pot.
Cover and Back at 250′ for 45 min. or until the chips are melted.  Stir until mixture is smooth.  Stir in nuts and rum extract.

Black Eye Pea Salad

1 16 oz. pkg. frozen black eyed peas
1 10 oz. pkg. frozen green peas
4 Green onions, sliced
2 Ribs celery, chopped
1/3 Cup mint
1/2 Cup olive oil
1/3 Cup white wine vinegar
2 Cloves garlic, minced
1 tsp. salt
1/4 tsp. pepper
1 Cup cherry tomatoes, halved
1/4 lb. bacon, cooked and crumbled

Cook the black eyed peas according to package directions; drain and place in Bean Pot.
Stir in green peas, onions, celery, yellow pepper, carrots and mint.
Mix oil, vinegar, garlic, salt and pepper together.
Pour over ingredients in Bean Pot; stir gently.
Cover and refrigerate overnight.
To serve top with tomatoes and bacon.

Smoked Sausage with veggies

Cut smoked sausage into chunks and put in bean pot.
Add 1 cup water, quartered potatoes, carrots, quartered cabbage and any other veggies you would like.
Cover with lid and bake at 350 for 20 - 30 minutes or until veggies are done.

Lemon Garlic Chicken

Place whole roasting chicken in bean pot
Add one head of garlic unpeeled in cavity of chicken
Cut lemon in quarters and add to pot
Season with salt and pepper
Cover with lid and cook at 350 for 1 1/2 - 2 hours

BBQ Pork

1 3lb pork roast
2 cups ketchup
1 chopped onion
1 can coke

Put all the ingredients into your bean pot and cook at 350 for 1 hour.
*Tip* cook 20 mins per pound

Baked Potato Curls

Peal and slice 4 potatoes and place in bean pot.  Chop 1 bunch of green onions and place in medium bowl.  Fry 4 or 5 strips of bacon and chop into fine bits.  Add bacon to green onion.  Press 2 garlic cloves into bowl and mix with 1 cup shredded cheddar cheese, 1/2 cup sour cream and 1/2 stick melted butter.  Mix together and pour over potatoes.  Cover with lid and bake at 375 for 20 - 30 mins.

Chicken Stew

Place chicken breast in bean pot
Cover with:
1 can chicken broth
1 can cream of chicken
1 pkg of onion soup mix
Cook at 250 for at least 4 hours
Add string beans and cover for 5 mins
Pour over angel hair pasta

BBQ Meatballs

Meatballs: 1 lb ground beef; 1 egg; 3 tbsp bread crums; 1/2 tsp salt- mix and shape into 30 balls.  Place meatballs in beanpot and microwave until cooked through.  Drain and place back in bean pot. 

To make the sauce add in 1 1/2 cups Chili Sauce; 1 cup grape jelly; 3 tsp brown mustard.  Slow cook at 250 for 5 -6 hours.  If making hors d'oeuvres, make smaller mini-meatballs.

Breakfast bake

Check out this breakfast bake in the hospitality set my sister in law made. She said its easy....1 egg whisked with 2 tablespoons milk. Cut the biscuits into quarters (I used 2 packages of grands) coat the biscuits with the egg mixture. Add bacon (I used 12 strips of the precooked stuff) I heated it and cut up with my kitchen shears. Added 3/4 cup of cheese and mixed it all together. Add green peppers and onions if desired and serve with sour cream if you'd like. Baked it for 26 minutes @ 350*
